Grape constitution at ripeness: Thanks to the 2011 weather conditions and the substantial work done in the vines, the crop gave berries with superbly complex aromas of ripe and fresh fruit. The quality of the berries, the very ripe skins and pips, the high concentration in anthocyanins, the good balances between pH, sugar and acidity were also very positive elements in the vintage. Harvesting: Daily tasting of the berries on the vines complemented with physico-chemical analyses of the grapes in the laboratory, together with the use of infrared aerial photography enabled us to determine the best time to harvest. We always lavish great care on the grapes while sorting and handling bunches, and in 2011 we also used an optical sorting line. This enabled us to perfect the process of eliminating those berries that are not perfectly healthy and ripe. Vinification: The vinifications were carried out in oak vats with the traditional gentle extraction through pump-overs and pigeages (punching down of the cap) according to the potential of each grape variety and a maceration with the cap immersed in the wine. The high concentration of extractable anthocyanins favoured very deep colour. Very ripe skins and pips allowed long vatting periods with no risk of extracting astringent tannins. A good quality crop, painstaking sorting, and gentle vinification were key factors in making a great Figeac this year. The quality of the vintage: The phenolic potential of the 2011 Figeac is high, thanks to the two very ripe Cabernets and the good balance between pH and acidity. The Merlot offers red berry notes and very round tannins. The Cabernet Franc shows richly concentrated aromas, fine tannins with lots of flesh. Finally, the Cabernet Sauvignon with freshness coming from the red berry and black fruit aromas (raspberry, blackcurrant and cherry) and coated tannins.
